64 yr old newby would like some help

as subject says, i'm 64.  not new using computers , basic programming.

i got first computer in 1974 - apple i  or ii.  gotta realize that small computer big deal then.

thru years i've done basic programming in - basic - pascal - , ton excel, macros , vba. read sample code posted projects arduino editor, can pretty follow going on. need learn of "new" statements me for.

so, if interested in giving guidance old man, here project:

i'm starting orchard - chestnut trees - kids , grand kids.  first round 250 of them son has grabbed onto , expand of next 3 years 1500 trees.

with volume need "grow own" i'm going startup green house. i've looked @ projects posted aren't complete enough, need start ground up.

i'll need minimum of 8 sensors , 6 relays.

for arduino board i'm thinking mega - gives room expansion.  suggestions please.

sensors: 
             outside temp - info (at point)

             inside air temp - control relays compost pile air intake. (compost can reach temp of
                150f) vents if hot , aux heat if needed.

             compost temp pile - info @ point

             ambient light - info only
             
             water temp - 2- 275 gal water tanks passive heat sinks.  info only

             soil moisture - turn water on , off

             co2 - plants breath , produce o2.  compost pile produce co2 - info

relays:
       
            water on , off - 12v
